Active Spirit Food

This soup is an invention of mine and I called it ‘super soup’ because it’s full of foods that are super healthy. More than an invention, it’s a concoction. In fact I didn’t put down how much of each ingredient to include because it’s not really important and you can throw in as much as you like. In the end it turned out great and I want to share it with you before the hot months kick in.

I managed this with the help of Farmer’s Deli. They deliver boxes of organic fruit and veg straight to your door. I don’t usually buy kale, or fresh turmeric (this is actually hard to find in supermarkets), so getting them delivered as part of a big box of greens ‘forces’ me to include them in my diet. Otherwise they would go to waste, and I don’t like wasting!

1. Ingredients

Onion (Finely chopped)

Garlic (Finely chopped)

Coconut oil

Kale (roughly chopped)

Carrots (sliced)

Potato (in cubes)

Zucchini (sliced)

Celery (sliced)

Fresh turmeric root (grated)

Fresh ginger root (grated)

Barley (not too much so that the soup doesn’t thicken)

Stock cube

Salt and pepper

2. Method

Sauté the onion and garlic in some coconut oil until soft and translucent. Add all the vegetables and stir in for a few minutes.

Add enough water to cover the veg and some extra. Throw in the stock cube and barley and bring to the boil. Once the soup is boiling, lower the heat and allow to simmer until the barley is cooked through.

Season with salt and pepper and serve!
